i made banana nut muffins today.. i actually used two different recipes... and made 2 dozen of muffins.. one with butter and one with vegetable oil.. no doubt that the one with butter tasted better.. but its still all good!
ingredients:
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup unsalted butter
2 eggs
5 bananas, mashed
2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup chopped walnuts
1 tsp vanilla extract
1/2 tsp cinnamon
Directions:
1) Preheat oven 375 F.
2) cream butter and sugar
3) add eggs (one at a time), banana and vanilla extract
4) add flour, baking soda, baking powder, salt and nuts to mixture.
5) Bake for 20-22 minutes (muffin)
i think im done with baking for now.. i shall cook some real food next time. :)
